Yankee Pot Roast.....

This is stick to your ribs GOOOOOOOOOOOOOOOD & guess what it;s healthy for you :) ~ I'm trying....



It was so nice to come home and just have to serve it up, heat it up & eat it up!!!!! I was in comfort food heaven.

Here is the recipe, very easy.

2 ½ lb lean rump roast
2 large onions
1 lb baby carrots
8 medium potatoes, quartered
1 packet onion soup mix
1 bottle of beer (I used MGD 64 it’s only 1 point for the whole bottle) or you can substitute 1 ¾ cup water
1 ½ tbs balsamic vinegar
1 tbs chopped garlic
Pepper to taste
2 tbs flour
Roasting bag
Day before pour beer into large bowl or freezer bag. Add soup mix and garlic & vinegar, mix together. Pepper up the roast and put it in the beer mix to marinate overnight.
Next day, preheat oven to 350 degrees. Coat inside of roasting bag with flour add roast & veggies. Toss together gently so you do not puncture bag. Put bag in roasting pan pop in oven cook 2 ½ - 3 hours until roast is cooked to your liking.
Makes 8 servings @ 1 cup of veggies & gravy and 2 slices of roast (slice roast into 16 equal slices).
