Tuesday Take 2!

O.k., I'm back again today, feeling better I'm happy to say and I have made up my mind that I'm not going to let anything spoil my time in church, the Church needs money too....I'll just put my head down, take out my Rosary Beads (Billy gave them to me, he got them from the Parris Island Chapel the first time he went during Boot) and pray

Speaking of PI, I still keep up with the message boards, Lori in-boxed me and told me that a lot of moms got a kick out of my "MotoPosts" ~ I still can't help getting a little teary eyed every time another Platoon sets out for the Crucible....

Actually that's where I met some of the best people I have ever had the opportunity to meet, Cindy, Leah, Donna, Glenn, Lisa, Beverly, Uncle Serge....just to name a fewWe were a great big bunch of crazy moms, dads, aunts, uncles, friends... you name it. WE never missed a day... letter writing, posting up on the board, and chatting with our friends in the box!!!

Kielbasa & Bow tie Casserole

1-bag broccoli florets (I use baby florets)
1-bag cauliflower florets
1 pkg kielbasa (I used a new brand Healthy something or other 95% FF, but feel free to use any kind you like)
1 cup frozen peas
1 can tomatoes in garlic
¾ can water
1 tbs garlic
2 cups uncooked bow tie pasta
¼ cup Parmesan cheese
8 ounces shredded cheese (I used reduced fat mozzarella)

spray non-stick pan w/ pam
add garlic, saute
add broccoli & cauliflower (I just tossed it right in the pan didn’t bother to heat up)
let heat for a few minutes
cut up kielbasa up and add to pan
cook another 10 minutes, stirring occasionally
add tomatoes and water, bring to a boil
add pasta and cook until pasta is tender
add peas
stir in Parmesan cheese
½ bag of cheese
mix together well
spray casserole dish w/ non-stick spray
pour into dish top w/ remaining cheese and bake at 350 degrees until cheese is bubbly and golden brown....

  1. Oh...how I miss PI! I really think I had rather be there than where I am right now!! But through PI we did meet a great group of people and I love them all! GG is coming up this weekend and I get to spend some time with her at Leahs. Sure wish you were gonna be there! Well another recipe and I can't wait to try it!! Oh and by the way I love those dancing bananas!!
