Healthy Cooking!


Hi, tonight I thought I'd try something different and just do a few low-fat healthy recipes...unfortunately I don't have pictures to post to show you how yummy they all look, but it's a start!

Beef & Spinach Stir fry (you can use pork or chicken too & dbl'ing the recipe isn't hard to do either)

8 ounces of angel hair pasta
4 teaspoons of olive oil
2 tbs sugar
1 lb lean beef cut into thin strips
1 head cabbage (average size)
1 bunch of scallions cut into pieces
1 bag of baby spinach
1 & 1/3 chicken stock
1/4 cup reduced sodium soy sauce

cook pasta
heat pan add oil, sprinkle sugar evenly over the bottom of the pan, stirring frequently until the sugar turns golden brown
add 1/2 of the beef cook until it is just about cooked through, remove to a plate and add the remaining beef & cook. once the beef is cooked add to the plated beef and set aside, add cabbage & scallion (i add a little of the broth now too to keep from sticking to the pan) cook until it is done to your desired texture 10 - 15 minutes.
add pasta and beef back to the pan add stock & soy sauce, bring to a boil and then reduce to a simmer and cook for another 5 - 10 minutes until all of the flavors have a chance to "marry" (cooking lingo)
add spinach and mix together

I plate it up on a big platter and add a few of the scallion ( i save a few cut pieces to sprinkle over the top) When we have this we also use chop-sticks, just makes it fun!


Frozen Snicker Pie


You're gonna' love this one!!!!!!

2 1/2 cups frozen fat free yogurt, I use vanilla flavored but chocolate is goo to use too
1 cup lite cool whip
1/4 cup crunchy peanut butter
8 reduced fat chocolate Graham crackers (you can use the regular reduced fat grahams if you can't find the chocolate flavored ones or use reduced fat oreos) I put these in a Ziploc bag and smash to use as a crust
1 package instant "diet" chocolate pudding (i use jello sugar free fat free dbl fudge)
spoon the yogurt into a stainless steel mixing bowl (i use this kind because it help the yogurt to melt a little, add the cool whip and mix together. add peanut butter and mix in. once these 3 ingredients are combined add the package of pudding (do not make the pudding you just want to add the dry powdery pudding mix) mix it in really good!
spray a pie plate with cooking spray and press in the smashed crackers/cookies making a crust. spoon in the yogurt mixture and spread evenly all around. Put back into freezer to let it re-freeze.
This makes 6 - 8 servings depending how you slice it up, but so good and guilt free!



It reall tastes like a Snickers Bar!!!!
