So Tired!!!!



Well, I was able to have my infusion, phewwww! I was relieved, it wipes me out, usually I take a nap when I get home but not today...we are supposed to have beautiful weather and I was looking forward to going to the beach so my husband pitched in and helped my with the housework! What a great guy!
So we're off to the beach tomorrow morning after the groceries get here...need my fruit to take to the beach!

Sorry to be sooooo short tonight but this is all I got, lol!

I'm going to take a shower and curl up with my book (and go to sleep), but shhhh don't tell anyone you know what happens when you try to steal a few minutes for yourself!

Ughhhhh.....!



Well, I'm going to make it short and sweet tonight, I'm too tired and I feel like I am catching a cold & that's not good.

A. I have toooo many thing s to do, Nikky & Mike's Engagement Party is next Saturday.

B. Catching a cold could potentially make me very sick....

C. If I am not feeling well tomorrow morning I won't be able to have my Remicade Infusion, so please please Lord don't let me be getting sick because it will throw me off schedule & I really really need it!!!

D. Please let all of my lab work come back within normal limits, because if the liver functions are off I'll have to stop for a few cycles....

E. I'm sorry to be whinny, I know that there are so many others out there who are so much worse off than I am but tonight I really don't feel good....



I have Rheumatoid Arthritis and Ankylosing Spondylitis (RA of the spine & vertebral body) so when it's time for my infusion and it's been damp and rainy I get really cranky

But after my infusion, I get to come home and nap (I usually nap for the whole afternoon)

And then, LOOK OUT!!!!! I AM A NEW WOMAN BY THE MORNING!!!

Healthy Cooking!


Hi, tonight I thought I'd try something different and just do a few low-fat healthy recipes...unfortunately I don't have pictures to post to show you how yummy they all look, but it's a start!

Beef & Spinach Stir fry (you can use pork or chicken too & dbl'ing the recipe isn't hard to do either)

8 ounces of angel hair pasta
4 teaspoons of olive oil
2 tbs sugar
1 lb lean beef cut into thin strips
1 head cabbage (average size)
1 bunch of scallions cut into pieces
1 bag of baby spinach
1 & 1/3 chicken stock
1/4 cup reduced sodium soy sauce

cook pasta
heat pan add oil, sprinkle sugar evenly over the bottom of the pan, stirring frequently until the sugar turns golden brown
add 1/2 of the beef cook until it is just about cooked through, remove to a plate and add the remaining beef & cook. once the beef is cooked add to the plated beef and set aside, add cabbage & scallion (i add a little of the broth now too to keep from sticking to the pan) cook until it is done to your desired texture 10 - 15 minutes.
add pasta and beef back to the pan add stock & soy sauce, bring to a boil and then reduce to a simmer and cook for another 5 - 10 minutes until all of the flavors have a chance to "marry" (cooking lingo)
add spinach and mix together

I plate it up on a big platter and add a few of the scallion ( i save a few cut pieces to sprinkle over the top) When we have this we also use chop-sticks, just makes it fun!


Frozen Snicker Pie


You're gonna' love this one!!!!!!

2 1/2 cups frozen fat free yogurt, I use vanilla flavored but chocolate is goo to use too
1 cup lite cool whip
1/4 cup crunchy peanut butter
8 reduced fat chocolate Graham crackers (you can use the regular reduced fat grahams if you can't find the chocolate flavored ones or use reduced fat oreos) I put these in a Ziploc bag and smash to use as a crust
1 package instant "diet" chocolate pudding (i use jello sugar free fat free dbl fudge)
spoon the yogurt into a stainless steel mixing bowl (i use this kind because it help the yogurt to melt a little, add the cool whip and mix together. add peanut butter and mix in. once these 3 ingredients are combined add the package of pudding (do not make the pudding you just want to add the dry powdery pudding mix) mix it in really good!
spray a pie plate with cooking spray and press in the smashed crackers/cookies making a crust. spoon in the yogurt mixture and spread evenly all around. Put back into freezer to let it re-freeze.
This makes 6 - 8 servings depending how you slice it up, but so good and guilt free!



It reall tastes like a Snickers Bar!!!!

Lucy & The Chocolate Factory....


Did you ever have one of those days when no matter how fast you worked you just couldn't keep up, kind of like the episode of Lucy when she and Ethel take jobs at the chocolate factory? We were laughing so hard today because we were just having on of those days & really what can you do but LAUGH???! It's really the best medicine.

Well, anyone that knows Barb & me say that we are just like Lucy & Ethel so we started talking about our favorite episodes and the great dresses that Lucy always wore. I'm Lucy & Barb is Ethel, lol! I really do Love Lucy! When Billy went away to PI I Love Lucy was on TV Land, 2 episodes starting at 5:00am every morning... now I grew up watching all of the old re-runs and loved everyone of them so when I found this flipping from the news to QVC one morning I said "Lynda, somebody up there is looking out for you and brought you a little bit of cheer to take your mind off of things"!

We didn't stop at Lucy another great old show....

or this one....


They really don't make shows like these anymore, and it's sad...Nothing like being a kid again and watching the Sunday Night Disney Movie.....Ahhh to be able to go back in time!

MONDAY......Need I Say More???!!!


Does anyone else hate Mondays as much as me????

Just a sampling of how my Monday went…………

• Woke up at 2:30am soaking wet it was pouring rain and the window over my bed was open and yup you guessed it I got all wet. Has to strip the bed which meant waking up the sleeping monster who then thought it was time to start her day, grrrrrrr!

• Fell back to sleep at about 3:30amish so tired!!!!!

• Woke up again at 5:30am LATE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

• Went downstairs to start the day turned on the kitchen lights and 2 bulbs blew out, we have the canister lights an those stupid bulbs are so expensive…why do we let our husbands have any input they were his idea, need I say more?
• Proceeded to flip on my coffee pot

• Fed the pooches and WAITED for my coffee……

• Still waiting…….

• Added the coffee but forgot to put the water in the water reservoir, grumble (simulated swear words, it's a family blog!) I get it ready the night before so I don’t have to fuss when I get up.

• Had to make a cup of instant, YUCK!

• Bailey tossed her ball & buggy into the tub while I was showering and then guess what SHE JUMPED IN, at that point what do you do….LAUGH REALLY HARD and kiss that silly dog because she just made your day…I love you Ms. Mama!

Even with all of those setbacks I still made it with 10 minutes to spare, yahoooo!
Just a few reasons why I want to outlaw Mondays…………………………

DAWG Days.....

Before I even get started I have to ask....have you ever asked your husband to do something and he does the exact opposite? mine does it to me all of the time...UGHHHH. I have been asking him to take our dogs to the groomer because they are shedding so badly, well has he, ummmm NO. They suffer from separation anxiety,it
s awful. Anytime they are left somewhere they get soooo worked up, poor babies. Well, because it is really ugly when they do get home, they pant, they pace, they follow me around and practically pin me to the ground we decided to try grooming them at home.

I tried a few weeks ago on my own and got the clippers stuck in Max's fur, his fur is so thick and coarse it's like a lion's mane, anyway I sent Mr. Platt to the store to buy dog grooming clippers and what does he come home with a brush that the girl in PetCo recommended ~ "WHY, WHY Didn't you get the clippers", the wife asks; "oh because the girl at the store said that this would work so much better" the husband answers. OMG ARE YOU KIDDING ME, Billy why just once can't you come back with what you have been sent out to get...this was his answer...

Well the brush thingy didn't work so off he went back to PetCo this morning to get what you ask???? CLIPPERS she replies, YEAH....and then we had Doggy Spa Day...




~ Max got a High & Tight...It's A Devil Dog thing - Ooh-Rah!

Poor Bailey Girl she got put on Lock-Down, sniff, sniff ~ she is a little terrorist!

O.k., before I dash off here is another low fat YUMMY dish (if you want to make it high fat go ahead, but I'm telling you make it the low fat way & nobody will even know, just you ;)!)

Taco Pie

1 can Pillsbury Crescent Rolls
1 lb of ground turkey or ground chicken or lean ground beef, whichever one you prefer. I usually use the ground turkey.
1 package of Taco Seasoning mix
½ jar of Salsa any kind roughly 6 – 8 ounces
1 onion chopped
1 bag of reduced fat cheddar cheese

Preheat oven to the recommended setting on the crescent roll package
Spray skillet with non-stick spray add meat and onions cook until meat is done
Add taco seasoning mix and half jar of salsa stir well combining all together
Unroll crescent rolls and press into pie plate that has been sprayed with cooking spray; you want to cover the bottom and sides as best you can
Spoon in half of the meat mixture add ½ bag of cheese spreading all over the top
Spoon in rest of the meat and top with remain cheese
Pop into the oven and cook it following the instructions on the crescent roll package (I think 11-13 minutes, but check the label)

You won’t believe how good this is and so easy to make! Makes 8 servings, I usually make a great big salad to go along with it & I make ahead so I just have to pop it out of the fridge plate it up heat & eat. Anything to save time when I get in from a long day at work!!!

I have even made this but instead of taco seasoning and salsa I’ve chopped a green pepper and cooked it with the meat and onion and then added a jar of Ragu Pizza Quick Sauce and substitute the cheddar for mozzarella and we have a meat-ball pie,lol!

Saturday Evening Post....

O.k. tonight I have to make it short and sweet, I am running SO far behind even for me...my poor husband is ready to shoot me.

My day started off on a great note, Billy was on-line early to this morning so we chatted for a while and then my groceries came. I have them delivered by PeaPod, it's great when you don't have the time to go to the market...I ordered everything on-line yesterday afternoon and it was delivered to my door this morning at 8:30!!!! YEAH ~ we have food in the house again, it was starting to look like Old Mother Hubbard's Cupboard :)


Then we went to the beach, IT WAS BEAUTIFUL, I read my book splashed in the water and then fell asleep and then just lazed around....when we got back my mother called and we started blabbing and I lost track of time so now I need to run...still have to make my zucchini cakes, YIKES!!!!!

Pics tomorrow, off to a BBQ!
